Acorn Squash Baked & Seasoned - Stuffed w/Stuffing - Vegetarian Vegetable Chicken

Introduction

This is a great entree for a vegetarian at Thanksgiving. This is a great entree for a vegetarian at Thanksgiving.
Number of Servings: 1

Ingredients

    1 acorn squash small - cut in half & seeded
    1 Tbls. honey
    1 Tbls. Olivio
    1 tsp Brown Sugar
    1 tsp Cinnamon or less
    Black pepper to taste

Directions

Prepare the Stuffing - Vegetarian Vegetable Chicken per recipe. Cut acorn squash in half & seed it. Put 1/2 of the olivio, honey, brown sugar, cinnamon & black pepper in each half of the acorn squash. Stuff it with 1 cup in to each half of the stuffing mixture...mound it up & wrap in foil. Bake in a 350 degree oven for about an hour on a baking sheet.
