Baked Macaroni and Cheese

Introduction

Who doesn't like mac and cheese. well here is a healthy version. This is more a side dish than a meal alone. Who doesn't like mac and cheese. well here is a healthy version. This is more a side dish than a meal alone.
Number of Servings: 6

Ingredients

    1 cup macaroni
    2 tsp margarine
    2 tbsp all - purpose flour
    1/4 tsp dry mustard
    Dash of cayenne
    1 1/2 cups milk skim
    1/2 cup cheddar cheese reduced fat
    1 tbsp parmesan cheese grated
    1/4 tsp salt
    Dash of pepper
    2 teaspoons breadcrumbs

Directions

Cook macaroni according to package omitting salt.
Melt margarine in a large saucepan over medium low heat ; add flour , mustard and red pepper. Cooke 1 minute stirring constantly with a wire shisk. Gradually add the milk stirring constantly. Cook over medium heat 10 minutes or intil thikened and bubbly. Remove from heat add cheese salt and pepper stirring until cheese melts. Add macaroni and stir well. Spoon into a 1 - quart casserole dish coated with vegetable cooking spray. Top with breadcrumbs. Bake coverd at 400 for 30 minutes. Makes 6 half cup servings
