Chilli Chicken Pasta

Number of Servings: 4

Ingredients

    2 x 200g skinless chicken breat fillets
    1 tsp sweet paprika
    1/4 tsp chilli flakes
    2 Tbsp olive oil
    300g spaghetti (dry weight)
    6 rashers bacon, chopped
    2 cloves garlic, sliced
    2 Tbsp finely grated lemon rind
    2 Tbsp lemon juice
    100g baby rocket

Directions

Prehate oven to 220C. Place chicken, pepper, paprike, chilli and 1 tablespoon oil on a baking tray and toss to coat. Roast for 10-15 minutes or until golden and cooked through. Slice and set aside.

Cook the spaghetti in a saucepan of salted bailing water for 10-12 minutes or until al dente. Drain, return to the pan and keep warem. Heat the remainign oil in a non-stick frying pan over high heat. Add the bacon and garlic and cook for 5 minutes or until golden and crisp. Add to the pasta with the chicken, lemon rind, lemon juice and rocket and toss to combine.
