Turkey Casserole (mine)

Ingredients

    97% Lean Ground Turkey, 12 oz
    Green Peppers, .25 cup, chopped
    Onions, .5 cup, chopped
    Poultry seasoning, 1 tsp
    Croutons savory seasoned, Weis, 5 oz (1bag)
    2% Sharp Cheddar Cheese, 8 oz
    Dry Mustard Powder, 1 tsp
    Egg substitute, (like Egg Beaters), .5 cup
    Milk, nonfat, 2 cup

Directions

Make 8 servings (9X 13 pan divided into 8 pieces).

Crumble turkey into skillet, add onions and peppers. Cook over medium heat until brown. Sprinkle with poultry seasoning. Coat a 9 x 13 inch baking dish with canola cooking spray and set aside.
2. Add turkey mixture to large bowl along with croutons, 1/2 of the cheese, mustard powder and salt, if desired. Combine egg substitute and milk in another bowl, and completely blended.
3. Drizzle egg-milk mixture over the turkey, crouton, and cheese mixture; stir to blend. Pour into baking dish, spread top evenly, sprinkle remaining cheese on top, cover with foil, then chill in the refrigerator for 8 hours or overnight.
4. Bake at 350 degrees, covered in foil, for 45 minutes. Uncover the foil, and reduce the temperature to 325 degrees. Bake for about 20 minutes longer or until set.
