Number of Servings: 6

Ingredients

    6 x 30g bocconcini, drained
    2 zucchini, cut into ribbons
    4 mint sprigs
    Olive oil to cover [most will not be consumed]
    1 clove garlic, crushed
    1 tsp lightly crushed coriander seeds
    1 Tbsp lemon zest
    Sea salt flakes & cracked black pepper

Directions

Wrap the bocconccini in zucchini ribbons and place in a jar just big enough to hold them with the mint. Combine sufficient oil to cover the boconccini with the garlic, coriander, lemon zest,, salt and pepper and pour over the bocconcini, ensuring they are completely covered. Seal tightly and store in the rfridge for up to 3 days. Serve as part of a mezze platter or in salads.
