Number of Servings: 10

Ingredients

    175g butter, melted
    1 1/3 cups icing sugar
    cup flour
    tsp ground cardamom
    1 cup ground almonds
    5 egg whites, lightly beaten
    1 cup stewed finely chopped apples
    1/3 cup slivered almonds

Directions

Preheat the oven to 180C. Grease 10 muffin or friand moulds using a little of the melted butter. Sift the icing sugar, flour and cardamom into a bowl. Mix in the ground almonds. Mix in the butter, then gently fold in the egg whites and apple until evenly combined. Spoon the mixture into the moulds and sprinkle with slivered almonds. Bake for 20 minutes or until the friands are golden and springy to the touch. Allow to cool for 5 minutes then gently remove them from the moulds and set on a wire rack.
