Ingredients

    PUDDING
    75g butter, softened
    cup caster sugar
    1 tsp vanilla extract
    1 egg
    1 cup self-raising flour, sifted
    cup ground almonds
    cup milk
    1 cup cream, to serve

    BLACKBERRY SYRUP
    2 cups frozen blackberries
    cup caster sugar
    1 Tbsp water

Directions

Preheat the oven to 180C. To make the blackberry syrup, place the blackberries, sugar and water in a small suacepan over medium heat and stir well to combine. Cook for 2 minutes or until syrupy but the blackberries are stil whole. Spoon the blackberries into 6 lightly greased cup capacity cups, reserving the syrup. Set aside and keep warm.
