Number of Servings: 4

Ingredients

    3 red apples, halved
    cup calvados
    cup brown sugar
    cup sage leaves
    1 Tbsp olive oil
    4 x 200g duck marylands, trimmed
    cup chicken stock
    Sea salt and fresh black pepper

Directions

Place the applies, calvados, brown sugar and sage in a bowl and toss to coat. Set aside.

Heat a large non-stick, ovenproof frying pan over high heat. Add the oil and duck, skin-side down, sprinkle with salt and pepper and cook for 2-3 minutes or until golden. Add the applies, cut-side down, and cook for a further minute. Add the stock and bring to the boil. Place the pan in the oven and cook for 25-30 minutes or until the duck and apple are tender and the sauce is sticky.
