Spicy Lamb with Yoghurt Dressing

Ingredients

    LAMB
    2 Tbsp olive oil
    500g lamb leg steak, sliced thinly
    1 garlic clove, crushed
    1 red onion, thinly sliced
    1 tsp each: finely grated lemon zest, honey, ground cumin
    tsp ground coriander
    2 Tbsp lemon juice
    Salt and freshly ground pepper

    DRESSING
    1 cup Greek-style yoghurt
    1 clove garlic, crushed
    2 Tbsp chopped fresh mint
    1 tsp honey

    TO SERVE (NOT INCLUDED IN CALCULATIONS)
    Pita bread, salad greens & hummus or
    Flat bread & tabouli

Directions

Combine all the dressing ingredients and set aside.

Heat half the oil in a frying pan, add the lamb and stir-fry over high heat for 3-4 minutes or until browned. Remove from the pan and set aside. Add the remaining oil to the pan with the garlic and red onion and cook over a medium heat for 2 minutes. Return the lamb to the pan along with the lemon zest, honey, cumin, coriander and lemon juice. Season with salt and pepper. Cook for a further 2 minutes.

Serve immediately in pita bread with salad, hummus and yoghurt dressing or with flat bread, tabouli and the yoghurt.
