6 Week Raisin Bran Muffins

Introduction

Makes a large batch of Raisin Bran muffins, batter can be kept in the refrigerator for up to 6 weeks. Makes a large batch of Raisin Bran muffins, batter can be kept in the refrigerator for up to 6 weeks.
Number of Servings: 54

Ingredients

    1 15 oz box of raisin bran
    1 cup applesauce (substituted for veg. oil)
    2 cups sugar (can even cut it down more to 1.5)
    4 eggs, slightly beaten
    1 qt lowfat buttermilk (or fat free)
    5 cups flour (can substitute wheat)
    5 tsps baking soda
    2 tsp salt

Directions

Mix Raisin Bran, sugar, flour, soda and salt in a very large mixing bowl. Add beaten eggs, applesauce, and buttermilk. Mix well, store batter in a covered container in refrigerator and use as desired.

To bake: Put batter into small muffin pans (either grease the cups or use muffin liners). Bake at 350 for 15 minutes or until a toothpick comes out dry when inserted in the center.

These are great when served warm with butter or honey or alone.
