RainbowCO's Herb, Zucchini and Lemon Pasta

Ingredients

    8 oz Hodgson Whole Wheat Veggie Rotini
    1/4 cup olive oil
    1 med onion, halfed and sliced
    2 medium tomatoes, quatered into 8ths
    3 meduim zucchini, thick sliced
    1/4 cup parmesam cheese
    1 tablespoon basil
    2 tablespoon lemon juice

Directions

1. Cook rotini according to package.
2. Meanwhile heat olive oil in skillet over medium heat and add zucchini and onion. Cook until tender crisp about 10 minutes.
3. Add cooked rotini and all other ingredients, remove from heat and cover. Let sit for 2 minutes. Serve

Serves 6 - 1 cup servings
