Vegan Raviolis with tomato vegetable sauce

Introduction

Ingredients

    14 Rising Moon Creamy Artichoke and Olive Ravioli
    Sauce:
    1/2 cup fat free pasta sauce
    1 tsp olive oil
    1/2 cup diced zucchini
    2 cloves chopped garlic
    1 cup sliced cremini mushrooms
    2 cups chopped spinach
    5 Kalamata olives, chopped
    1/4 cup Quorn groungs

Directions

In a heavy saucepan, saute the garlic, quorn grounds and mushrooms. Add zucchini and spinach, stir around for a minute, then add the pasta sauce. Add a little water, cover and simmer for about 15 minutes, or until veggies are tender.

Meanwhile bring a few cups of water to a boil and simmer raviolis until just past al dente. Drain, top with sauce and enjoy!
