MJ'S Chicken/Rice Casserole

Ingredients

    1 c jasmine rice
    2 c onions
    1 c green pepper
    11oz. diced chicken
    2 cans creamed mushroom soup
    28oz.can tomatoes

Directions

Saute onion and green pepper in medium saucepan.
Cut up chicken into bite size pieces. Once onion and green pepper are cooked mix with mushroom soup.
Place uncooked rice in bottom of casserole dish. Place tomatoes on top of uncooked rice(make sure tomato juice and water add up to 1 1/2c)
place chopped chicken on top of rice/tomato mixture. Place onion/mushroom soup mixture on top of chicken and add salt/pepper as needed
Bake at 350 for an hour and enjoy!!

1c serving = 311 cals
