Ingredients

    1 fillet of beef (approx. 1kg)
    2 cloves garlic, finely chopped
    1 Tbsp black pepper
    Sea salt
    2 Tbsp olive oil
    1 clove garlic, extra
    1 Tbsp salted capers, rinsed & drained
    2 anchovies
    3 gherkins
    1 large handful of herbs, parsley, mint & basil
    1/2 tsp Dijon mustard
    1 Tbsp lemon juice
    2 Tbsp olive oil, extra
    500g baby potatoes, steamed or roasted, to serve
    400g green beans, to serve

Directions

Place beef fillet in a roasting dish and rub with garlic, pepper, salt and olive oil. Cover and rest at room temperature for an hour. Preheat the over to 220C.

Uncover meat and roast for 20 minutes. Remove from oven and rest, uncovered, for 30 minutes before slicing.

Roughly chop extra garlic, capers, anchovies, gherkins and herbs. Stir through mustard, lemon juice and extra olive oil. Taste and adjust with pepper and more lemon juice or oil if necessary. Serve the day it is made with the roasted beef, potatoes and beans.
