Borscht (Beet Soup)

Introduction

Easy Beet Soup Easy Beet Soup
Number of Servings: 8

Ingredients

    2 tsp olive oil
    1 cup diced onion
    2 cloves garlic
    6 cups beef stock
    3 diced beets
    1 diced potato
    1 cup diced carrots
    1 cup sliced cabbage
    1 bay leaf
    fresh dill
    dash of black pepper

Directions

Heat olive oil in large stockpot.
Add onions and saute until translucent.
Add garlic and saute another minute.
Add broth, beets, potato, cabbage, bayleaf and pepper.
Bring to a boil and then lower to simmer.
Cook for 30 minutes.
Taste and add any more pepper or salt.
Add diced dill prior to serving.
Great served with a tbsp of fat free sour cream or a whole-wheat roll.

    Tastes fantastic! My modifications included using "Better than Boullion" vegetable base (subtracts 37 per serving) to make it vegetarian and blending it breifly with an immersion blender for a thicker base. (you need to edit your directions to say when to put in the carrots!) - 3/30/08

    This looks interesting and healthy, but as a vegetarian, I will be substituting roasted vegetable broth for the beef broth. - 3/30/08

    I really liked this. Not bad for beets. ;) It is perfect for making as a batch and then taking to work as a healthy lunch, paired with crackers and some fruit for dessert. - 12/10/07

  • I made this in a slow cooker and sliced up 12 oz. of chicken-apple smoked sausage to go with the veggies. I also substituted vegetable stock for the beef stock. - 12/21/11
