IntroductionEasy Beet Soup Easy Beet Soup
2 tsp olive oil
1 cup diced onion
2 cloves garlic
6 cups beef stock
3 diced beets
1 diced potato
1 cup diced carrots
1 cup sliced cabbage
1 bay leaf
dash of black pepper
Add onions and saute until translucent.
Add garlic and saute another minute.
Add broth, beets, potato, cabbage, bayleaf and pepper.
Bring to a boil and then lower to simmer.
Cook for 30 minutes.
Taste and add any more pepper or salt.
Add diced dill prior to serving.
Great served with a tbsp of fat free sour cream or a whole-wheat roll.
