Mushroom Stroganoff

Introduction

One of our favorite vegitarian dishes! One of our favorite vegitarian dishes!
Number of Servings: 4

Ingredients

    6 oz dry egg noodles
    4 Tbsp butter
    1 pound sliced mushrooms
    1/2 cup chopped yellow onion
    2 Tbsp dry white wine
    1 Tbsp crushed garlic
    1/4 tsp salt
    2 Tbsp unbleached flour
    1 cup vegetable broth heated
    1/2 cup lowfat sour cream
    2 tablespoons catsup.

Directions

Cook egg noodles in boiling water for about 5 minutes. Drain and transfer to a warm serving bowl. If the sauce is not done yet, set the noodles aside.

Melt 2 tablespoons butter in a pan. Add mushrooms, onion, wine, garlic, and salt. Saute about 5 minutes until the mushrooms are limp.

In a separate sauce pan over medium heat, melt the remaining 2 tablespoons butter. Add the flour, then gradually add the hot stock, whisking to incorporate it into a smooth sauce. Whisk in the sour cream and catsup and cook until thickened, about 2 minutes, whisking constantly. Fold in the mushroom mixture.

Pour the hot sauce over the noodles and toss to combine well.
