Yukon Gold Wedges

Ingredients

    5 medium Yukon Gold potatoes, cut into wedges
    1 Tbl olive oil
    1/4 cup dry bread crumbs
    1 1/2 tsp paprika
    3/4 tsp salt
    1/4 tsp dried oregano
    1/4 tsp dried thyme
    1/4 tsp ground cumin
    1/8 tsp pepper
    1/8 tsp cayenne pepper

Directions

In a large bowl, toss potatoes with oil. Combine remaining ingredients; sprinkle over potatoes and toss to coat.

Arrange potatoes in single layer in a 15x10x1 baking pan coated with cooking spray. Bake, uncovered, at 425 degrees for 40-45 minutes, or until tender. Stir once.
