Chicken and Corn Chowder

Introduction

Number of Servings: 6

Ingredients

    5 cups chicken broth
    2 cups corn broth
    1 cup onion
    1 cup diced celery
    1 cup cubed potato
    5 tbsp butter
    5 tbsp flour
    1 cup butternut squash
    1 cup corn
    1 cup red pepper
    1 cup cooked chicken (or turkey), diced
    1/2 cup dried cranberries
    2 tbsp heavy cream

Directions

Makes 6 servings

Melt butter in pan.
Add onion, celery and potato, cook 10 minutes.
Add flour, cook 7 minutes stirring constantly or until flour /butter mixture starts to brown and stick to pan - do not burn!
Add in broths slowly, stirring constantly; bring to a boil.
Add butternut squash and red pepper and cooked chicken.
Simmer covered for 40-45 minutes
Stir in cream and cranberries
Serve!
