Introduction

Ingredients

    1 lb tilapia, 4 filets, frozen or fresh
    1/2 cup salad olives
    Black pepper to taste
    2 cups diced tomatoes, roma if fresh
    1 onion, chopped
    3-6 cloves of garlic, chopped
    Italian seasoning or Herbes de Provence, 1 tbsp
    Optional - either 1 cup of white wine or 1 tbsp cumin
    1/4 cup olive juice, optional or salt to taste

Directions

Preheat oven to 350
Coat 13" x 9" pan in olive oil
Add all ingredients except tilapia to pan
Mix ingredients in pan, distribute evenly
Slip the fish filets under the mixture
Cook for 30-45 minutes, depending on how thawed the fish is
Makes 4 servings
