No Crust Pumpkin Pie

Introduction

Make your favorite pumpkin pie but don't use a crust. It is custard smooth and delicious. Make your favorite pumpkin pie but don't use a crust. It is custard smooth and delicious.
Number of Servings: 24

Ingredients

    1 large Can of Pumpkin
    2 cans of Evaporated Milk (non fat)
    4 large eggs
    1.25 to 1.5 Cups of Sugar
    (Use Artificial or Blue Agave, if desired)
    4 Tsp of Pumpkin Pie Spice
    .25 Tsp Salt
    1 TBSP Vanilla

Directions

Mix sugar and Dry spices in a bowl. Set aside. Put pumpkin, eggs in a large bowl and mix. Slowly add the sugar and spices. Add Vanilla. Lastly, add the evaporated milk a little at a time until you have added two cans. Pour into 3 pie pans (8" each). Bake at 450 for 10 minutes. Turn the heat down to 350 and bake until a knife comes out clean. Check after 35 minutes and every 5 minutes until done. Great with Fat Free Cool Whip.
