Introduction

This could be made with ground turkey, with terrific results. However, this was my concoction created to use up my leftover Thanksgiving turkey. This could be made with ground turkey, with terrific results. However, this was my concoction created to use up my leftover Thanksgiving turkey.

Ingredients

    3 cups leftover mashed potatoes
    2 tablespoon s dried parsley

    1/2 lb leftover roasted turkey (white meat)
    1/2 lb left over roasted turkey (dark meat)
    1 can (14oz) Swanson's fat free chicken broth
    3 tablespoons flour
    1/2 teaspoon dried Thyme
    1/8 teaspoon ground Black Pepper
    1 can (14 oz) (1 1/2 cups) canned mixed vegetables
    1/4 cup chopped onion

Directions

Preheat oven to 350"F

In a large skillet warm the left over turkey (chopped bite size).
Add the broth, flour, thyme and pepper. Heat to a boil. Simmer until thick. If necessary add additional flour. (not included in dietary calculations).
Add the onions and mixed vegetables mixing completely.
Transfer this mixture to a 8x8x2 inch square glass casserole dish.
Mix the leftover mashed potatoes with the parsley.
Spread the mashed potatoes over the top of the turkey / vegetable mixture and place in a 350' oven to bake for 30 minutes or until the potatoes are slightly browned. This recipe yields 6 portions.
