Introduction

Ingredients

    2 c. grated carrot
    1/2 c. raisins, preferably golden
    2 tbsp. olive oil
    2 tbsp minced fresh mint
    1 1/2 tbsp fresh lemon juice
    1/2 tsp sugar
    1/4 tsp cumin
    1/8 tsp cinnamon
    1/8 tsp ground red pepper
    salt and pepper

Directions

Grate carrots, combine with raisins, add reminder of ingredients. Makes four servings.
