9 lasagna noodles 2 cups marinara sauce 2 cups cottage cheese 3 oz feta cheese 5 oz cheddar cheese 5 oz fresh spinach, wilted prior to useage .5 cup fresh mushrooms .5 cup fresh broccoli 1 red bell pepper, chopped 1 egg 1/4 t pepper 2 cloves garlic 1 t basil 1 t oregano
Mix together wilted spinach (wilt in a pan with a little EVOO), broccoli pieces, cottage cheese, feta, 3 oz of the cheddar, and the egg with the spices. Lay 3 noodles down in your pan, top with a third of your marinara sauce. Layer half of the cheese mix on top and half of the bell peppers and mushrooms on top of that. Repeat. Top with the remaining 3 lasagna noodles and marinara sauce. Put the remaining cheese on top and cover with foil. Cook at 350 for an hour.
