5 large shrimp, cooked and diced in to bite size pieces 1/3 C uncooked couscous 1/2 C chicken broth 1/2 can of petite diced tomatoes, liquid reserved 1 tablespoon of chopped cilantro 1 teaspoon lime juice 1 teaspoon lime zest 1 tablespoon extra virgin olive oil salt and pepper to taste
Bring chicken broth and reserved tomato liquid (approximately 1/4 cup) to a boil in a medium saucepan. Stir in all remaining ingredients, cover, and remove from heat.
After 5 minutes, remove lid, fluff couscous with a fork, and enjoy!
This was great I used tomatoes with green chiles and used less olive oil, so mine was about 200 calories. I left out the lime also. I also add more cilantro because I love it. With the less oil it was a lot more healthy. I well fix this again.
