Zucchini Spice Cookies

Introduction

Number of Servings: 48

Ingredients

    2 cups all purpose flour
    1 tsp. baking soda
    1 tsp ground cinnamon
    1/2 tsp salt
    1 1/2 sticks unsalted butter
    1 cup granulated sugar
    1 egg, beaten
    1 cup finely grated zucchini
    1 cup chopped pecans
    1 cup chopped cranberries
    zest of one orange
    To sprinkle on top: 1/4 c sugar, 1 tsp. cinnamon, 1 tsp. cloves, 1 tsp. nutmeg

Directions

1) Preheat oven to 350.
2) Combine flour, baking soda, cinnamon, and salt in a medium bowl. Seperately, combine .25 cup sugar, 1 tsp. cloves, 1 tsp. nutmeg, and 1 tsp. cinnamon, and reserve.
3) Combine butter and sugar in a large bowl. Beat with a mixer at medium-high speed until light and fluffy. Beat egg seperately, then add and beat well.
4) Gradually add flour mixture, and beat until smooth. The dough will be stiff.
5) Stir in remaining ingredients.
6) Drop by heaping teaspoonfuls 2 inches apart onto baking sheets. Flatten with fork or spoon, and sprinkle with sugar & spice mixture.
7) Bake each sheet 12-15 minutes until edges begin to brown. Do not over-bake.
