Morning Glory Muffins

Introduction

I love morning glory muffins, but don't like the bakery ones full of fat and who knows what else. These are the ones I came up with to satisfy my craving. They avoid tasting like cake, and are pretty nutritious. My husband likes the coconut as is, but I would prefer less, and just sprinkled top. They would be good with some pineapple in them too. Number of Servings: 18

Ingredients

    2 cups flour
    2 t cinnamon
    2 t baking soda
    1/2 t salt
    pinch ground ginger
    2 cups grated carrots
    1/2 cup raisins
    1/4 cup chopped pecans
    1/2 cup shredded coconut
    2 eggs
    2 egg whites
    1/4 cup oil
    1/3 cup applesauce
    2 t vanilla
    1/4 cup sugar
    1/2 cup (scant) Splenda for baking
    1 apple, cored and grated

Directions

Combine flour, cinnamon, baking soda, salt, and ginger. Add carrots, raisins, pecans, and coconut. Toss to coat.
In a separate bowl, combine eggs,oil, applesauce, vanilla, sugar, Splenda, and apple. Stir into dry ingredients until just blended. Spoon into 18 silicone muffins cups. Bake at 350 for 18-25 minutes.
