Sauted chicken pasta

Ingredients

    2 tbsp olive oil
    1 lb boneless skinless chicken breast
    1/2 c chopped onion
    1 clove garlic
    1 c chopped bell pepper
    1 can diced tomatoes, drained
    Italian seasoning, to taste
    kosher salt, to taste
    8 oz Barilla whole grain penne

Directions

Cut chicken into bite size pieces. Season with Italian seasoning and salt. Cover and refrigerate a few hours.
Boil water for pasta and cook according to directions.
Meanwhile, heat olive oil in large skillet over med heat.
Add chopped garlic and onion and cook until soft, 1-2 min.
Add pepper and tomatoes and cook about 3 minutes.
Increase to med-high heat and add chicken. Brown chicken, stirring often. Continue cooking, stirring occasionally until chicken in cooked through and vegetable juices have cooked down.
Serve 1 cup chicken mixture over 1 cup pasta.
Top with 1 tbsp parm. cheese, if desired ( not in calorie count)
