Cranberry orange muffins

Ingredients

2 C whole wheat flour
1/3 C sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
1 1/2 C orange juice
1/4 C canola oil
1 egg
1 C fresh or frozen cranberries, halved
1/2 C chopped pecans
Directions
1. In a large bowl, combine the dry ingredients. In a small bowl, whisk the orange juice, oil and egg. Stir into dry ingredients just until moistened. Fold in cranberries & nuts.
2. Coat muffin cups with cooking spray or use paper liners; fill 3/4 full with batter. Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.
Makes 1 1/2 dozen muffins
