Cranberry orange muffins

Number of Servings: 18

Ingredients

    2 C whole wheat flour
    1/3 C sugar
    2 t baking powder
    1/2 t baking soda
    1/4 t salt
    1 1/2 C orange juice
    1/4 C canola oil
    1 egg
    1 C fresh or frozen cranberries, halved
    1/2 C chopped pecans

Directions

1. In a large bowl, combine the dry ingredients. In a small bowl, whisk the orange juice, oil and egg. Stir into dry ingredients just until moistened. Fold in cranberries & nuts.

2. Coat muffin cups with cooking spray or use paper liners; fill 3/4 full with batter. Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

Makes 1 1/2 dozen muffins

  • This was just what I was looking for when planning Thanksgiving dinner. I substituted maple sugar, tangerine juice and walnuts as that is what was on hand, and it was still great. Light and fluffy and full of flavor. Hard not to eat just one! - 11/24/11

  • These muffins were so easy to make, I couldn't believe it! Taste of Home is a great source, so I knew I couldn't go wrong with your chosen recipe. THESE ARE WONDERFUL! Now that I know that they're delicious, I'll be doubling the batch so I can have plenty to freeze! Thanks for sharing this recipe!! - 12/5/09
