Low fat spicy chicken soup

Introduction

This is a very spicy and satisfying chicken soup. It takes very little active time and is super good for you with high protien, fiber and low fat, This is a very spicy and satisfying chicken soup. It takes very little active time and is super good for you with high protien, fiber and low fat,
Number of Servings: 4

Ingredients

    Chicken Breast: 1-2 large/ 9 oz
    onions: 2
    Tomatoes: 3-4
    serrano peppers: 3
    garlic: 5-6 cloves
    water: 4 cups
    Black beans: 1 can reduced sodium
    salt to taste

Directions

Makes 3 large servings

1. Chop chicken, onion, tomatoes, garlic, peppers.
2. In a pot, boil the water and the chopped chicken and veggies until everything becomes soft.
3. remove the chicken from the pot and shred it.
4. Puree the rest of the soup
5. Add back to the pot along with the chicken and the can of black beans
6. salt to taste, and bring to a boil
7. enjoy!

optional: this becomes very spicy due to boiling peppers with the soup. Reduce number of chillies and take them out before pureeing to reduce spice.
I sometimes add a small piece of ginger that I fish out with the chicken.
