Red Quinoa and Spinach Salad

Introduction

Ingredients

    1-1/4 Cup Chicken Broth
    1 Cup Red Quinoa
    1/2 Cup Carrots, chopped
    1/2 Cup Celery, chopped
    1/2 Cup Tomato, chopped
    4 Fresh Basil Leaves, torn or cut into small pieces
    1 Tbsp Extra Virgin Olive Oil
    1 Tbsp Lemon Juice
    4 Cups Baby Spinach Leaves
    Salt and Pepper, to taste

Directions

Rinse quinoa well and drain. Bring chicken broth to a boil and add quinoa. Cover and lower heat. Simmer for 15 minutes, then remove from heat and let sit for 5 minutes. Fluff with a fork.

Meanwhile, prepare vegetables. Mix vegetables, basil, olive oil, and lemon juice together with the prepared quinoa. Add salt and pepper to taste and put in fridge to chill.

To serve, divide baby spinach leaves onto 4 plates. Place 1 cup of quinoa mixture in the center of the spinach leaves. Garnish with a lemon wedge if desired.

Makes four 1-cup servings.
