Broccoli Rice Parmesan

Introduction

Use homemade chicken stock or veggie broth that is low sodium or sodium free, and also low fat. Use homemade chicken stock or veggie broth that is low sodium or sodium free, and also low fat.
Number of Servings: 1

Ingredients

    * White Rice, long grain, .25 cup
    * Chicken stock, home-prepared, 1 cup
    * Best Choice Broccoli Florets, 1 cup
    * Parmesan Cheese, grated, 1 tbsp
    * *Soy Sauce, 1 tsp

Directions

Place rice and chicken stock in microwave proof dish or 4 cup glass measuring cup. Microwave on high, uncovered for 15 minutes. Add broccoli, toss to combine. Loosely cover with plastic wrap. Cook on high for 3 minutes more. Stir in cheese. Place in serving dish. Season with soy sauce to taste.
