IntroductionBrazilian chicken and vegetable salad. Brazilian chicken and vegetable salad.
3 well seasoned grilled chicken breasts, chopped
11oz can of corn, drained
2 cups of frozen peas, defrosted and drained
5 medium carrots
1/2 cup EACH of parsley, scallion, green olives (all chopped)
4 Tbsp mayo
salt & pepper to taste
season and cook chicken (use herbs of your choice), chop
cook carrots and chop into small pieces
chop parsley, scallions, green olives
thaw and drain peas
mix all ingredients and in large bowl. Add salt and pepper to taste serve cold or room temperature.
