Introduction

This freezes fantastically in 2 cup containers. After it cools, it becomes somewhat solid. I reheat it and dilute with 2% milk.

Also great heated with parmesan sprinkled on top served with crusty bread.

Number of Servings: 28

Ingredients

    2 - 1 pound bags peas
    3/4 of a 1 pound bag of pearl barley
    ham bone
    1 ham steak chopped
    2 large onions chopped
    2 med-lg potatoes skin-on chopped
    4 cups carrots chopped
    4 cups celery hearts and tops chopped
    3 cloves garlic chopped
    3 tsp black pepper - fresh ground
    smoke flavoring (1 tsp to start, adjust to your taste)
    1/2 tbsp rosemary
    1/2 tbsp thyme
    2 bay leaves

Tips

You can always add water as needed. Don't put too much in to start - just make sure all is covered throughout the cooking process.


Directions

soak peas overnight
rinse
put all ingredients in large stock pot then cover with water (appx. 12cups).
bring to boil over med-high heat
reduce to med and stir every 30 min. takes 3-4 hrs
makes 28 1 cup servings
