Introduction

From Cooking Light magazine. Add Vanilla Whey Protein Powder 2 Tbsp. to up protein (not in this recipe).

Ingredients

    Quaker Oats, 1.5 cup
    Light Sllk Soymilk (plain), 1/4 cup
    Pillsbury Whole Wheat Flour, 3/4 cup
    Flaxseed, 2 tbsp
    Baking Powder, 2 tsp
    Baking Soda, 1/2 tsp
    Cinnamon, ground, 2 tsp
    Dates, 14 dates (finely chopped)
    Country Creek Farms Egg Whites, 2
    Grapeseed Oil, 1/4 c.
    Agave Nectar (light), 2 tbsp

Directions

Set oven to 400 degrees.

Combine oatmeal and milk in a bowl, set aside and let soak.

In a large bowl, mix flour, flaxseed, baking powder, baking soda, cinnamon, and dates (finely chopped).

In second bowl, combine egg, oil, Agave and prune puree. Mix wet into Oatmeal/Milk mixture. Then stir this into the flour mix.

Spoon into muffin tray that has been sprayed with non stick oil spray. Bake.
