Introduction

I couldn't find a squash casserole recipe I really liked, so this is a combination of the two that were the closest to what I was looking for. The taste is pretty mild as per my picky 11-year old, but you could easily jazz it up with herbs, spices or the addition of other veggies. Ingredients

    3 C. Yellow Squash, peeled and sliced thin
    1/2 C. Scallions, chopped
    3 Cloves of Garlic, minced
    2 Large Eggs
    1/2 C. Italian Seasoned Bread Crumbs
    1 Tbsp Unsalted Butter
    3 Tbsp Grated Parmesan Cheese
    1 1/2 C. Mozzarella Cheese, divided

Directions

Preheat oven to 350.

Steam squash on stovetop or in microwave until tender. Melt butter in pan and saute scallions and garlic until soft. Combine squash, scallions, garlic, eggs, breadcrumbs, parmesan and 1/2 cup of mozzarella and place in greased casserole dish.

Bake for 30-40 minutes or until center is set. Top with remaining cup of mozzarella and place under broiler for about 10 minutes or until lightly browned.

Makes about 6 one cup servings.
