Introduction

Number of Servings: 17

Ingredients

    3 - 8oz packages of sliced fresh mushrooms, can use portabella or white, or mixture of both
    2 - large onions. I weighed mine and got 220g on one and 188g on the other,
    1 - 32 oz carton low fat chicken broth
    1 - 14 oz can beef broth
    1 T Worchestershire Sauce
    1-2T minced garlic (from jar) - to taste
    salt and pepper to taste
    approximately 54 oz water

Directions

Place in crock pot:
sliced onions - very thin, put in crock pot with the sliced mushrooms (I buy the sliced in the 8oz package), add garlic, worchestershire, salt, pepper, broth, and water. I fill the broth containers with water, rinse and add to the crock pot. Cook on low for about 8 hours. Add salt and pepper to taste,
Makes 17 cups of soup (depends on how much water you add)

  • this is very close to my favorite recipe!
    I love onion mushroom soup! However, I did make a couple of changes.
    I precook the onions until translucent.
    I use 2 cans of 32 ounce vegetable broth
    I don't add the extra water, and I cook it on the stove for about 45 minutes - 8/4/10
