No Tortillas Chicken Tortilla Soup

Introduction

Great way to use left over cooked chicken. Great way to use left over cooked chicken.
Number of Servings: 8

Ingredients

    1 tsp.-Tbsp. canola oil
    1 onion, diced
    1 tsp. fresh, minced garlic
    1 c. fresh corn (canned or frozen is fine)
    1 can Mexican tomatoes (like Rotel)
    1 can black beans, rinsed and drained
    1 carton (30-32 oz.) low sodium, low fat chicken broth
    1 lb. cooked chicken breast, cubed
    1 Tbsp. chili powder
    1/2 Tbsp. ground cumin
    juice of 1 lime
    salt to taste (if desired)
    chopped cilantro (optional garnish)

Directions

Heat oil in pot or Dutch oven. Saute onion until translucent. Add garlic and saute one minute more. Add corn and saute for 1 minute or so. Add can of tomatoes, rinsed beans, broth, chicken, chili powder, and cumin. Bring to boil. Reduce to simmer. Cook uncovered for 10 to 15 minutes. Turn off heat. Add juice of 1 lime and salt to taste if you prefer.

Makes 8 one cup servings.

Variation: If you like a less-soupy soup, reduce the amount of broth. Instead of chicken breast, you can use shredded chicken or cut up leftover roasted deli chicken. Garnish with chopped cilantro and/or chopped red bell pepper. If you like and can spare the calories, top with crushed corn tortillas chips, and/or a dollop of fat free sour cream.
