Stuffed sweet peppers

Ingredients

    1 pound lean ground beef
    1 cup raw rice
    1/2 medium chopped onion
    1 large can (26 oz.) condensed tomato soup
    4 large sweet peppers-cut into halves (longways)
    1/2 teaspoon each of salt, black pepper, onion powder and garlic powder

Directions

Clean and cut peppers in half longways. Set aside in baking pan. In a large bowl place ground beef, rice, onion, seasonings, and one cup of the condensed tomato soup. Mix well. Stuff each half of pepper with 1/2 (measured) cup of the mixture. Fill can of remaining condensed tomato soup with water to brim. Stir to mix, then pour over filled peppers. Cover baking pan with foil and cook in a pre-heated 350 degree oven for approx. 1 hour.
Makes 8 one half cup servings each.
