Heart-Healthy Meat Loaf

Introduction

Number of Servings: 6

Ingredients

    1 Egg lightly beaten
    1/3 cup Salsa
    1/2 cup chopped Green Peppers
    1/4 cup chopped Onions
    1/4 cup Cilantro
    1/4 cup quick cooking rolled oats
    16 oz Ground beef
    2 TBS Ketchup

Directions

Preheat oven to 350. Lightly spray a loaf pan with nonstick cooking spray.

In a large bowl, combine egg, salsa, sweet pepper, onion, 1/4 cilantro, and oats. Add ground ground meat; mix well. Lightly pat mixture into prepared loaf pan.

Bake 40 minutes. Spoon ketchup on top of meatloaf, spreading evenly. Bake 10 minutes more. Let stand 10 minutes before serving.

Serve with additional Salsa if desired.
