Ingredients

    2 cups white rice, medium grain
    1 cup canned mixed vegetables
    1 cup chopped onions
    1/4 cup red bell peppers
    1/4 cup olive oil

Directions

Stir fry onions and peppers in the olive oil for about 5 minutes, add rice, vegetables, salt and water. Stir. Keep uncovered, on high heat until the liquid is almost evaporated. cover and bring heat to low until cooked, about 20 minutes.
