Split Pea Soup with Ham (16 1-cup servings)

Introduction

This makes a thick soup. If you prefer a thinner soup, use 1 cup less peas. I made a lot in order to freeze some for later. This makes a thick soup. If you prefer a thinner soup, use 1 cup less peas. I made a lot in order to freeze some for later.

Ingredients

    3 quarts water
    Leftover ham bone with meat (about 1-1/2 pounds total)
    4 cups green split peas
    2 cups diced onion
    1 cup diced carrot
    1 cup diced celery
    3 bay leaves
    2 teaspoons thyme
    1 teaspoon ground black pepper

Directions

Put everying in a soup pot, bring to a boil, lower heat and simmer until peas are tender and starting to fall apart. Turn off heat. Remove ham bone, and let cool. Remove bone from ham, dice meat and return to soup. Remove bay leaves. Adjust seasoning.

You can boil the ham and water first for 45 minutes, if you prefer, then add the remaining ingredients.
