Introduction

This is a variation of Campbell's. It is high in sodium, but if the cream soups were switched to low sodium and plain chicken breast was used, it would cut this number substantially. I added some seasoning after it was done. Love the Mrs. Dash seasonings. This is a variation of Campbell's. Ingredients

    1 can (10.75 oz.) 98% Fat Free Cream of Chicken Soup
    1 can (10.75 oz.) 98% Fat Free Cream of Mushroom Soup
    1.75 Cups Water
    2 Cups Fat Free Shredded Cheddar Cheese
    9 oz. Grilled Italian-Style Chicken Breast (cubed)
    1.5 Cups Enriched Med. Grain White Rice
    12 oz. Mixed Vegetables

Directions

Par-boil rice in water. While rice is cooking, mix the soups, chicken, water, and vegetables all together. Pour into 9x12 glass baking dish. Drain rice. Pour into soup mixture. Mix all together. Sprinkle cheese on top. Placealuminum foil on top. Bake at 350 for approx. 1 hour. Makes approx. 8 1 Cup servings. Will be a little runny at first. Let cool for 5-10 minutes and sauce will thicken.
