shamefully simple chunky mushroom tomato sauce

Introduction

I am totally on a "cook quick and use up what is in the house" kick. I typically make my sauce following a family recipe that's been around longer than my family has been in this country, probably, hey, this was pretty tasty and FAST!

This makes 3 one cup servings.

Ingredients

    Hunt's Crushed Tomatoes, 28 oz
    store brand pieces & stems canned mushrooms, 8 oz
    BIG handful each: dried basil, parsely
    rosemary (I always use it with mushrooms, even just a little)
    some Kosher salt
    BIG heaping tablespoon of minced garlic (I buy the huge jars at Costco - I am serious about my garlic)

Directions

I threw my can of mushrooms in the a sauce pot over medium and let them cook up a bit. I then added the whole can of crushed tomatoes and spices. Brought it up to a boil and then let is simmer and pop until the rest of my meal was ready. SO EASY and tasted delicious.

How I ate it:
I served myself 2oz. whole wheat penne, 1 oz. of sauteed fresh spinach, 1/2 of a hot Italian sausage link that I removed casing to cook, and 1/4 cup of fat free ricotta. FYI: I actually threw the spinach in my non-stick pan with the sausage (after I drained the sausage and wiped out the pan). Once it wilted I added the ricotta and let it all melt together a bit. I threw it into my serving bowl and topped it all with 1 cup of this sauce. I added some fresh black pepper, too.

I intend to serve the last two cups of sauce over creamy polenta for a tasty meat free meal.
