Sweet Potato and Lentil Stew

Introduction

This is actually from Betty Crocker, but it's so easy, tasty, and healthy. My husband and I both love it. It's perfect for cold winter nights, and we usually have most everything on hand for it already. This is actually from Betty Crocker, but it's so easy, tasty, and healthy. Number of Servings: 6

Ingredients

    3 cups sweet potatoes, cut into 1 inch cubes
    1 1/2 cups carrots, cut into large chunks
    1 cup lentils, rinsed and picked over
    1 medium onion, cut into large chunks
    2 T olive oil
    1-2 cloves garlic, minced
    1 T curry powder
    1 t cumin
    1/2 t salt
    1/4 t black pepper
    dash (or more!) cayenne pepper
    1 can vegetable broth (reduced sodium is good)

Directions

Spray slow cooker with nonstick spray and throw in the veggies. Sautee spices in oil for a few minutes, until fragrant. Add the broth, turn off heat, and stir to combine. Pour over vegetables and stir together. Put on the lid of the slow cooker and cook for about five hours.
Makes six servings.
