Thai Garlic Soup

Introduction

Mild vegan soup that tastes even better heated up the next day. Mild vegan soup that tastes even better heated up the next day.
Number of Servings: 4

Ingredients

    4 cups low sodium vegetable broth
    3 tbsp minced garlic
    4 cups water
    1 tbsp olive oil
    2 cups sliced carrots
    3 cups cabbage cole slaw
    3 tbsp miso paste
    2 cups sliced mushrooms

Directions

Heat up olive oil and saute mushrooms and garlic for 5 - 10 minutes (until garlic begins to brown). Add all ingredients except the miso. Let simmer, covered until carrots are tender. Add miso and let simmer for 10 minutes. Makes 4 2-cup servings or 6-8 first course servings.
