Jenn's Egg Salad

Introduction

I love egg salad. I add peppers and celery (you can even add onions if you want) to the egg salad and makes for nice crunch and excellent flavour to your egg salad! I love egg salad. I add peppers and celery (you can even add onions if you want) to the egg salad and makes for nice crunch and excellent flavour to your egg salad!
Number of Servings: 3

Ingredients

    6 eggs - hard boiled
    4 tsp Yellow or spicy brown mustard
    6 TBSP Light Mayo or Miracle whip (about 1T per egg)
    2 stalks of celery, chopped up
    1/2 green bell pepper, chopped
    sweet or hot pickle relish

Directions

Slice eggs, remove yoke. Dice the egg whites. Place yoke in a small bowl.

In the small bowl with yolks, smash the yolks with a fork until a mash starts to form. Add the mustard. Mix together.

In a bowl with the whites, add the Mayo. Add your celery and peppers and Relish. (Relish and peppers can be added to taste, if you want more, add more, if you want less add less!)

Mix the yolk mixture with the white mixture.

Voila! you have yummy egg salad! Serve on your favourite bread or crackers... or eat by itself!
