Vegetable Frittata

Introduction

Ingredients

    1 1/2 c Zuchini chopped
    1 1/2 chopped mushrooms
    3/4 c chopped onion
    3/4 c chopped green pepper
    3 cloves garlic, minced
    9 eggs, beaten
    1/4 c half and half, low fat
    1 8-ounce package fat free cream cheese
    2 cups cheddar cheese, low fat, shredded
    1 tsp salt
    1/4 tsp ground black pepper

Directions

Prep time 30min
Cook time 1 hour
Serves 8

Preheat oven to 350. Lightly grease 9x13 pan
Saute veggies over medium high heat until tender, remove from heat, let cool slightly. Drain any excess fluid
In a large bowl beat together eggs, and cream. Stir in cheese and veggies. Season with Salt and pepper. Mix well and pour into prepared baking dish. Bake for one hour or until center is set.
