Mashed Spiced Sweet Potatoes

Introduction

This nutritious vegan take on mashed sweet potatoes takes its lead from traditional candied sweet potatoes. This nutritious vegan take on mashed sweet potatoes takes its lead from traditional candied sweet potatoes.
Number of Servings: 5

Ingredients

    6 large sweet potatoes, peeled and cubed
    1/4 cup lowfat vanilla soy milk
    1 tsp vanilla extract
    3 tbsp pure maple syrup
    2-3 tsp salt
    1 tbsp ground cinnamon
    1 tsp ground nutmeg
    1 tsp ground cloves
    1 tsp ginger

Directions

1) Rinse cubed sweet potatoes in water and place in pot with enough water to cover them and salt. Boil until they become tender and are easily pierced with a fork.
2) Drain and place back in pot over very low heat. Pour in soy milk, maple syrup, vanilla extract, and spices and mash potatoes until smooth.
3) If you like your mashed sweet potatoes wetter, add a little more soy milk.
4) Serve and enjoy!
