Nut Crusted Mahi Mahi

Introduction

This is a basic recipe for Mahi Mahi. I found it to be a tad bland, it needed maybe some paremsan cheese mixed into the nut, crumb mixture. Although my children and husband gobbled this up with the help of ranch dressing. This is a basic recipe for Mahi Mahi. Ingredients

    1 1/4 cup chopped macadamia nuts
    1/2 cup panko
    2 TBL flour
    1/4 cup butter, unsalted - melted
    4 - 6 mahi mahi filets
    2 TBL coconut milk
    Olive Oil for brushing foil
    Salt and Pepper

Directions

Preheat oven to 425 degrees F. Place a piece of aluminum foil on a baking sheet and brush it with the olive oil. Place the mahi mahi on the foil and season both sides with salt and pepper. Bake for 5 minutes. While baking combine the nuts, panko, flour and butter. Remove fish from oven and brush with coconut milk. Scoop the nut, panko mixture ontop of each piece of fish, slighly pushing it down with the back of the spoon. Bake an additioin 5 - 10 minutes or until crust is golden brown. Let the fish rest for about 10 minutes. Makes 4 - 6 servings depending on the size of the fish.
