Bisquick Banana Bread (Low Fat)

Introduction

Ingredients

    2 -1/3 cups Heart Smart Bisquick mix
    3/4 cup sugar
    1 1/2 cups mashed banana (2-3, depending on size)
    3/4 cup liquid egg substitute (like Egg Beaters)
    1 tsp vanilla extract
    1/3 cup applesauce
    1 tsp nutmeg

    Topping:
    1/4 cup brown sugar
    1/4 cup chopped walnuts (or pecans)
    1 Tablespoon Flax Seed Meal (ground flax seeds)
    1 tsp ground cinnamon

Directions

Preheat oven to 350 degrees.
Spray loaf pan (9x5x3 in) with Pam or other non-stick cooking spray.

Batter:
Mash bananas and mix with sugar, egg substitute, applesauce, and vanilla.
Stir in Bisquick mix and nutmeg, just until incorporated. Do not over-mix as it will toughen the bread.
Pour batter into pan.

Topping:
Chop 1/4 cup nuts and mix with brown sugar and flax seed meal. Sprinkle on top of batter and sprinkle with cinnamon. Bake for about 1 hour or more until toothpick inserted comes out clean.
Let cool for about 5-10 minutes, remove from pan and place on baking rack to cool.
Slice and serve. Enjoy!!!
